That surely is a nice-looking setup, VF, and it can't be beat for centralizing weight between the axles. Beautifully made and executed, and a fine-looking result. I've seen other bikes with these bags and came away impressed each time.
My only hesitation with such for myself relates to my need for massive water carriage on my unsupported solo desert crossings. Still, instead of bottles, a person could substitute something like an MSR Dromedary water bag inside one of the midframe bags and simply refill the two accessible outside bottles as needed.
Have you added any sort of protection for the paint finish under the straps? I would imagine a full load would go far toward minimizing any movement and bounce, but would be a little concerned about the possibility of scuff-through over the long haul. I'm thinking a wrap of tape of some sort would address any concerns.
One last question: I'm guessing these are made from coated fabrics, but might not be waterproof in the way Ortlieb panniers are. Do you use plastic bags or dry sacks inside to keep things dry?
