Running tire's at the max pressure on the sidewall makes no sense.  The pressure you use should be based on your weight and your cargo.  Here is some info on how to determine the correct pressure:

I don't get hugely obsessive about this so I eyeball how much my tires deflect vertically and find that's good enough for most riding.  If I was going to ride a brevet at 200kms+ per day I'd probably take the trouble to measure it and ensure my pressure was accurately set.
