I bought one for my wife a couple of years ago. Although she was not an experienced cycle-tourist at the time, she was bowled over by just how stable it was loaded with 4 panniers.

Any 700c touring rim would suit. The missus runs CR18s, but, as per other posts in this forum, they have worn quite quickly.

There are some nice Mavic rims available or you could try the inexpensive Alex rims. The ones I have fitted to my xTc seem solid, reliable, but reasonably light.

I've had a CLub Tour for about 4 years, it's done everything I've asked of it.
The original wheels were standard, and I broke a couple of spokes fairly quickly. (Heavy rider, lots of dirt roads.)
I had new wheels built, still with CR18 rims, but LX hubs & DT double butted spokes, 2-cross on the rear drive side, 3-cross elsewhere. I've had no problems since. If I were doing it again, I'd probably use a different rim, as the CR18s are pinned and shudder a bit under braking because of the slightly uneven joint. Probably Velocity Dyads or Synergys, as they are reasonably light, and utterly bulletproof.
As far as tyres go, I've user Conti UltraGators and Panaracer Tservs for lightweight tyres, and Conti Contacts when I wanted a larger tyre. The Tservs seem to be a slightly heavier version of the Pasella, and have proved a lot more durable under my conditions.
