I think you need to do some research into that for your country.  Anything we say about other countries does not matter as it could be different in your country.

In my case (into USA), the mail carrier brought my big box to my front door, but needed to be paid before I could get the box from him.

You could ask Bike Friday how they would ship it, for example by DHL or some other shipper?  Then you could contact that shipper representative in your country and ask them the procedures.

Yes, but is it possible to avoid to pay this taxe, if i bring the kit frame as a gift or something like that..

Are you asking about having it sent, or carrying it with you?  If sent the gift limits are pretty low, 45 Euro for VAT and 150 Euro for import duties.  There's no honest way round that and it isn't in a suppliers interest to be dishonest.
If you're carrying something into the EU that you've bought abroad, you have to declare it at customs (At the airport or you can do it online before departure), the tax free limit is 430 Euro. You'll have to check how that works, I don't know if it's the first 430 of a more expensive item or if the entire item has to be under the limit.  As with having stuff sent, I'm sure there are dishonest practices, I know nothing of them and if I did I wouldn't discuss them in public.

There are Bike Friday suppliers in Belgium and Germany, maybe elsewhere in Europe. The German supplier seems easier to use as their website is in English, the Belgian supplier seems to use Flemish only.

I live in France and sometimes buy stuff from outside the EU, which now includes the UK since Brexit is almost fully implemented.

It is a bit of a lottery, sometimes there are NO charges. Sometimes fees AND customs duties/tax - I don't think I have had fees WITHOUT customs duties/tax.

The new world of increasing international tariffs may change things?  For example it looks like steel and alloy prices in America must rise, which will effect the price of cycles.
I use one component which I have to buy from America and have intentionally overstocked as I know the price today but it may be different tomorrow.
Don’t assume today’s price and import costs will be the same in the future.

I am in USA where the whole tariff thing is getting crazy.  To keep this non-political, I won't elaborate.

My vehicle will probably need new tires this coming fall.  They are still legal, just barely, but won't have much tread in snow next winter.  Decided which tire I wanted to buy, asked at the shop where the tires were made, he did not know as that tire company has plants in about five countries, one of which is in China and one in the EU.  So, I decided to get new tires now since I know I will need them in a half year.  By luck of the draw, that size of that model are made in USA, thus there would not have been tariffs if I had waited.

But, when local production has less competition because the tariffs made their competitors costs go up, that means the local producers can raise their prices too, without losing customers.  So, I am 100 percent certain that the tires cost less now than they would have in another half year if I had waited.  So, I am glad I got them now.

When I bought my Nomad Mk II frame and fork in 2013, the box also had the CSS rims and a lot of other parts and supplies.  If the value was less than $800 USD, there would have been no customs duty.  But the value of the box was over that, thus I had to pay duty on the full value, not just the value over the first $800.  If SJS would have put it into two boxes, each at a value less than $800 USD, the shipping cost would have been higher but no customs duty.
