That is a very beautiful bike. 

My Lynskey, V brake with Koolstop Salmon pads on front, disc on rear.  I find that the disc is much better in wet than the rim brake.  But dry conditions, both about the same.

That said, there is a very tall steep hill that I have ridden down a few times, the disc was fading rather badly towards the bottom, rim brake not fading at all.  That was in dry conditions.

Like Moronic on his motor bike I do most of my braking with the front V brake. I am now using the Salmon pads.After a long dry Summer we are now in  la Nina weather pattern in Melbourne and back to the traditional wet Winter. So I was out the other day in some quite heavy rain and I applied the front brake and nothing happened for about five metres! Another time on a local multi use path a dog on a long lead rushed out in front of me and I grabbed both brakes and locked the back disc.
My Mercury is a 2016 model with 622mm diameter  wheels and is a great bike.
