Thorn audax mk3r size: 550 or 570

Dear forum users,
I am a passionate cyclists of 34 years old, I live in Rome, italy. I own two steel road bikes, a moser leader ax (early 90s size 55,5) and a Rossi (late 70s 57 frame), I am using the second one for events like L'Eroica etc. I attach a couple of pictures of the two bikes....
After a lot of reading online (and on this forum) I am evaluating to make myself a present consisting in yours Steel audax mk3r frame.

I just have to decide the frame size being undecided between the 550 and the 570. here are my main dimensions:

rider heigth=1780
saddle height=770
saddle setback=72
saddle-to-handlebar-horizontal=530/540 (I prefer a more relaxed position)
saddle-to-handlebar-vertical=60/70 (I prefer a more relaxed position)

I have a little stiff back and I prefer a saddle to handlebar height difference to be around 60 mm.
I believe that the I would fit a 110 stem on the 550 and a 100 stem on the 570 ( I do not like the feeling of stems shorter than 100mm, my saddle to handlebar actual distance is around 540mm).

My concern is about using too many headset spacers on the 550 frame or being forced to use a too short stem on the 570 frame.

Do you have any suggestion about it?
