Too hard to be specific, what I'd choose today might be different tomorrow and I haven't done your reaserch.
It would be the light end of touring, 700c wheels, drop bars and of course a Rohloff. I really fancy building the frame on one of Dave Yates frame building courses, old fashioned lugged frame with chrome ends.  On the other hand maybe titanium...
It isn’t going to happen any time soon, the bikes I have now are more than good enough for their purpose and I'd rather spend my money on cycling than cycles.  But we can all dream and maybe one day...
